I am definitely not a gourmet chef, but there are some things that I cook really well. However, when I do cook, it’s always the same dishes that I know I’m good at. What I’m hoping to do is try a new recipe every Sunday and blog about it in hopes that I can improve my cooking skills and add some really good recipes under the “food” tab on the home page of my blog. I’m starting off with super easy recipes to get in the habit of cooking, photographing the steps and blogging it and then I’ll progress to more challenging dishes.
This Sunday’s recipe is Tater Tot Casserole. It’s ridiculously easy, inexpensive and pretty yummy. I’ve seen variations of this recipe in many different places and I love tater tots so I decided to try it. This recipe serves 4.
Here’s what you’ll need:
Preheat oven to 375 degrees. Cook onions in a little bit of olive oil until soft.
Add ground beef to the onions and cook until browned.
In a 9×13 pan, combine ground beef mixture & cream of celery soup (or cream of mushroom – whichever you prefer). Add a little of the shredded cheese on top.
Layer the top of the mixture with the tater tots. It took almost all of the 32 oz bag.
Top with the remaining shredded cheese and bake until the cheese is melted. Let it set for 5-10 minutes and enjoy!
- 1 lb – lean ground beef
- 1/2 – medium onion, chopped (I used 2 small onions I already had)
- 1 – (10 1/2 ounce) can condensed cream of celery or cream of chicken soup
- 1 – 32 ounce package frozen tater tots
- 1 – 8 ounce bag shredded cheddar cheese
- salt & pepper
Preheat oven to 375.
Sauté onions until they are soft.
Add ground beef (adding salt and pepper to taste) to the cooked onions and cook until browned.
In a 9×13 casserole dish, combine ground beef mixture & cream of celery soup. Add a little of the shredded cheese to the top of it.
Top mixture with tater tots. (It will take almost the whole bag for a 9×13 pan.)
Bake, uncovered, for 30-40 minutes till bubbly and the tater tots are golden brown.
Remove from oven and top with the remaining shredded cheese. Return to oven until melted.
Mike really enjoyed the Tater Tot Casserole and had a suggestion if we have it again. He suggested adding some cooked, crumbled bacon on top of the tater tots before adding the cheese to melt. I think the bacon idea is awesome, because honestly bacon makes anything better!
